Make a cozy Homemade Pumpkin Spice Latte at home with a quick pumpkin-spice syrup and steamed milk. This version works with espresso or strong brewed coffee and can be made dairy or plant-based.

Ingredients
- 2 tbsp pumpkin puree (not pumpkin pie filling)
- 2 tbsp brown sugar (or maple syrup for vegan)
- 1/2 tsp pumpkin pie spice (or 1/4 tsp each cinnamon + ginger + pinch nutmeg + pinch cloves)
- 1/4 tsp vanilla extract
- 1 cup milk or plant milk (almond, oat, soy)
- 2 shots espresso (or 3/4 cup strong brewed coffee)
- Optional: whipped cream and extra cinnamon for topping
Instructions
- Make the pumpkin spice syrup: In a small saucepan, whisk together pumpkin puree, brown sugar, pumpkin pie spice, and 2 tablespoons water until smooth.
- Simmer briefly: Place over medium-low heat and simmer 2–3 minutes, stirring, until the sugar dissolves and the mixture is fragrant. Remove from heat and whisk in vanilla. If you want a smoother syrup, press through a fine mesh sieve.
- Brew coffee: While the syrup simmers, pull 2 shots of espresso or brew 3/4 cup strong coffee.
- Heat and froth milk: Heat milk in a small saucepan until steaming (do not boil). Froth with a milk frother or whisk vigorously until foamy.
- Assemble the latte: Divide the pumpkin syrup between two mugs (about 1–1.5 tbsp per mug). Pour espresso/coffee over the syrup, then top with steamed milk, holding back foam with a spoon and then spooning foam on top.
- Finish and serve: Top with whipped cream if using and a sprinkle of pumpkin pie spice or cinnamon. Serve immediately.

- Make ahead: The pumpkin spice syrup stores in an airtight jar in the fridge for up to 1 week. Warm slightly before using.
- Vegan option: Use maple syrup instead of brown sugar and plant-based milk.
- Stronger coffee: Use more espresso or less milk for a stronger flavor.
- Using canned pumpkin: Use plain 100% pumpkin puree (not the spiced pie filling).
- Adjust sweetness: Taste the syrup and add more sugar or maple syrup to your preference.
